    My beer taste sour is it ok?

    I just bottled the beer today. I tasted it before putting it in the bottling bucket and besides having a really strong alcohol taste it was fine. Im hoping the strong alcohol will mellow once its in the bottle a couple of weeks. Thanks for help.

    I usually only take one now when i first put it in the primary and when im about to transfer to secondary or bottle. Im having trouble with my hydrometer though, Im new to this so Ive only made 3 batches so far but it seems like every time the gravity is off from what the recipe says its suppose...

    Hydrometer reading............

    i usually take a sample every two days. I have a test jar and its about 6 oz to get a reading. (maybe thats to much) If I do that over a 14 day period that could add up to a couple of beers worth. Im probaly just worry to much. This is my first time brewing.

    sounds like I should invest in a wine thief. Ive never actually seen or used one. You dont have to syphon the beer into anything, you can just take the reading with it in the thief?

    Hydrometer reading............

    Is there anyway to take a hydrometer reading without wasting the beer? If you sanitize everything really well is it ok to just pour the beer back in the fermenter after you get the reading?

    I didnt know that. It looks like based on what everyone is saying, that everything is fine. Next time I will bring the wort down as close to 60 degrees as I can get and then make sure to mix the wort in real good with the wort before i take a sample

    I dont think I put to much water in. I had a little less than 4 gals of wort when I added it to the primary, I only put in about a gallon and a half of water to bring it to 5 gals. I think i just needed to mix the water in the wort more next time. Thanks.

    Ok so I brewed my first batch of beer this morning. Everything went fine. I cooled the wort down to just under 80 degrees and poured it into my primary. I added about 2 gallons of water to bring it up to 5 gallons. I syphoned some off into a test jar and took a hydrometer reading it read only...

    Thanks for the advice. I got the recipe and a beer kit from a local home brew store. The instructions say to rack to secondary after seven days, thats the only reason I did it. How long should I leave it in the secondary?

    This is my first time brewing. Im brewing a bells best brown ale clone. I just racked to secondary after seven days in the primary. As i was racking I syphoned off some of the beer and tasted it. It tasted very sour. Does this mean that something is wrong with my beer? Is it ruined?
