Normally i rinse my mash with cool water and just boil down after. Would it help if I used 170 degree water to rinse?
See if you can find a 6 pack of Caldera IPA. It comes in neon yellow cans. Heck try their amber or pale ale as well if you can find them. They're out of sourthern Oregon (ashland)
Depends on your yeast optimal temps, They generally have a 5 degree range like 70-75. I'd shoot for the low end (70 in this case) and everything should be fine.

1.06 to 1.01 isn't too bad. You can always sample one that day and make up your mind. I think using that much honey will give you a more alcohol taste though.
Bought my ingredients for this today, should be making it tomorrow. This will be my first big beer. I plan on oaking this and adding a very small amount of cherries in the secondary.
