    You're probably right about the wide pan. Something to think about. I wonder if the forum should put a warning in any homebrewing threads and sticky it so people can know the risks?

Thinking otherwise could keep me from trying some good beers :) I think what's being lost here is that my original comment was more about the average beer drinker from the midwest (I guess I should have said the southern midwest maybe ;))...

    Funny I did this as well last night, but only by about 6 degrees. 158 vs 152. I'll be interested in what you are told.

    Metal might be best, but if you clean and store your measuring stick after use it won't rot.

    I just had a cider take 2 weeks to start because I over sulfited and it took a while to evaporate off enough to allow the yeast to start.

    Well I did a midnight run of this last night. I'm nervous though because I hit my water temp and got my grain in and then went in to talk to the wife for a bit and 25 minutes later I look at the temp and its sitting at 158. I'm guessing I didn't let the thermometer sit long enough or my turkey...
