I've topped off some beers before and didn't notice too much of a difference in quality, but I do prefer to have the full volume if possible. I think it would be worth getting a 10 gallon kettle, especially if you plan on doing all grain.

Is the bottom dump 1/2" NPT? Everything Augiedoggy said is spot on. If it is 1/2" threads and you do want to convert it to tri clover, I would get an adapter that goes from 1/2" NPT to TC. But like Augie said, it won't make it completely sanitary because you will still have the threads.

I would probably leave it as is especially since you hit your numbers. See how it turns out and adjust next time. Especially since it is an IPA anyway, the potential extra bitterness shouldn't be too much of an issue.

Ditto to what everyone has said so far. If I use a bag, I just soak it in star san before adding the hops and I've never had issues with infections. Welcome back to brewing!

The best reason to bag them is if you plan on pulling them out before you transfer out of the fermentor. Otherwise I've usually just thrown them in, but either way works.

I would make a fermentation chamber first. Usually the biggest factor in consistency and making better beer is being able to control fermentation temperature. I do hate bottling and having a kegerator is friggen awesome, but being able to ferment at whatever temperature you want is pretty great too.

You could get away with using a 15 gallon kettle, but you might run into some issues if you do bigger beers. A 20 gallon kettle should be perfect.

This is the same way I've done in the past and it's turned out great!

For the SMaSH recipes I've brewed, they usually end up being something around a Pale Ale, but I'm not too concerned with hitting any specific style but rather just want to be able to showcase the malt and hop I'm using.

They are generally used to be welded into a vessel. That way you can screw a ball valve directly onto a pot without having to use a hex nipple as you would with a standard coupler.
