    Yes. I'd do whatever's most convenient, safe, and durable. Personally, I'd build the shelf out of two parallel circular cuts of 304/316 SS perforated sheet and weld on some SS bars to make a table-looking thing, but there are an infinite number of ways to go at this.     So you aren't making up anything on your profile about your location. Try to find a good welder out there, and be sure that he backpurges the keg as he welds it so that the stainless steel on the inside will be preserved!

    False Bottom/Shelf

    It's unnecessary to call it a false shelf...it's just a shelf. Why don't you design one based on standoffs that just rests on the cooler's bottom? It would be simple to make and would probably be very removable and maintainable...

    Thermometers

    Ashcroft bimetal 5" everyangle thermometers. Accurate to 1 degree, and the scale is nice and visible with the 5" face. Probe depth is 9", and I use a thermowell in all of my kettles.

    YES. Very good idea. I didn't do this when i removed my top, and there are little spots now where the hot metal hit the bottom and messed up the oxidation layer. My welds don't rust as I backed them, but the little spots sure do...I need to clean those up soon.

    You might want to use more bleach. I probably use 1 to 2 ounces per gallon, just to be sure that everything is out of there! But since bleach requires rinsing, you may be getting the bacteria in your equipment while you are cleaning them out. If you have suspicion of this, just try another...

    I've heard of bacteria count too, but it's everywhere. How much does it matter though when you're going to boil it (or get it close enough) anyway?

    I'd go with trying to find one at a Northern. I paid about $50 for my adjustable Corona mill that can hold about 1.5 pounds of grain from Midwest Supplies or something like it. If you can avoid buying from a HBS, you will find that you can usually pay MUCH less...

    The mash should still be wet, no? There will be enough liquid under the false bottom to conduct heat to the mash. False bottoms have the added bonus that they protect the mash from burning because the mash is kept a good distance from the direct heat.
