    since its a darker red it ages pretty good. I've let a 6 pack or 2 sit in the fridge for several months (pseudo lagering) and the result was a crystal clear clean Irish red.

    crystal 120 (or 130) is a close substitute for caraaroma. Not sure how the black barley is going to change the flavor profile as I've never used it. The recipe you have is going to be completely different from what mine is but I'm sure it'll still turn out to be a great beer.

    yeah the website I was hosting them at is no longer around. but the feedback from the judges were all positive. one even went as far as saying a flawless example of the style. as far as the roasted finish, brew it using the ingredients listed (brewmasterswharehouse.com carries them all) ...

    yes they'll crush the grains for you. In fact, unless you tell them NOT to crush them they'll crush the grains by default.

    using any similar hops works... use what you have available and you'll still end up with a great beer. this recipe is very forgiving

    all home brew is better than commercial. That said, Killians is a red lager this is an ale. Brew it and let us know how it compares for you. For me personally, it blows Killians away.

    like tim said... what temp are you fermenting at. did you use a starter? what yeast did you use? what temp did you mash at? did giving it a shake help? if shaking failed and raising the temp a degree or two doesn't help. there's always beano and fresh yeast.

    looks great!! give it time to carb up and it'll be even better. There isn't much difference between a porter and stout so don't worry about that. in fact, you could enter this into a comp as a robust porter or oatmeal porter and it'd do great :)

    no... N2o won't make it a cream ale... Cream Ale is a completely different style..N20 will give a creamy head but even that wont be much of a change from the way it was designed. Irish Red Ale as defined by the BJCP Description: An easy-drinking pint. Malt-focused with an initial sweetness...

    Pacman is a great choice for this beer... WLP007 is another good yeast but you have to watch the diacetyl that you can get from that yeast
