    looks awesome! I personally primary for 30 days. it gives the yeast time to clean up after itself then bottle and wait another 4 weeks before cooling and drinking. yeah I know.. 2 months for a beer but it's worth it. It was also the reason I started kegging everything :)

    I used Caraaroma and Melanoiden for the red color. trust me... it has plenty of red. yeah.. seems this is one of the most popular Irish Reds... there's a reason for that :)

    carafoam and carapils are interchangable... the hops in this recipe are not the star. any hop that gets you in the same IBU range and doesn't get used as a flavoring hop (should be no hops flavor), i.e. used for 30 mins or longer to boil off the flavor/aroma, will work.

    I used my well water. however there have been times (after prolonged heavy rain) that the well got muddied and I used spring water from the store. the beer turned out great.
