    Man, I love Apfelwein

Just got done making my Apfelwein, per the instructions. Made 6 Gallons, using 2.5 pounds of dextrose. Pitched the Montrechet, and it's sitting quietly in the basement now. Do I need to worry about light with this brew? Our days are kinda weird here lately, some days it's 78, and 50 at night...

    Something Chocolaty, creamy and sweet

How much lactose would you think to add, and when? 15 mins from the end of the boil?

Describe the flavor of an extract brew

I think the extract "twang" is more often made into this huge difference, when really, there isn't that much of a difference. If the beer is fermented, and allowed to sit for awhile before drinking, all the flavors mellow into a smooth beer. Maybe AG is ready "faster" than extract in that regard.

    Something Chocolaty, creamy and sweet

Looking for a stout recipe that is both chocolaty, creamy, and sweet. Kind of like a dessert beer...a chocolate milk kind of beer. Something that hides the alcohol well...that you wouldn't notice too much until you already had too many. LOL Anyone have a recipe like that? Preferably an...

    Keggerator Freakout

I used Wyeast 3942 Belgian Wheat from a starter. To be honest, from what I've seen from the SWMBO Slayer thread, I was expecting blowoff. So I put in my blow off tube, and ended up with a 2 inch Krausen. I swirled it down off the sides, and the Krausen never reformed. I got home yesterday...

    Keggerator Freakout

So last night before I go to bed, I check up on my SWMBO Slayer in my keggerator. Been in there since Sunday night. The temp in the keggerator is 90 on my thermometer. The beer temp is 76! Why? Because somehow, the new light I installed was running for about 6 hrs STRAIGHT. Kicking off...

    Diacetyl?

After reading this poor blokes issues: https://www.homebrewtalk.com/f36/i-may-quit-soon-help-131283/ Is Diacetyl something I need to worry about? I am fermenting in a fridge with a johnson controls set to around 60. Fermenting beer is at 65 degrees. It'll be a week fermenting on Sunday. There...

    Ed's APFELWEIN Juice Question

Any particular fermenting temp required? I can do it in my keggerator at a constant 65 degrees....or I can do it at ambient. Which can swing from 50 at night to 75 in the day. ( Fall is coming )

    Ed's APFELWEIN Juice Question

    Ed's APFELWEIN Juice Question

Can't get the Tree Top Juice anywhere near me. Have local cider mills producing cider this time of year, but not sure if that's ok or juice only. Can anyone help me with a recommendation? I'd love to get this going now in time for the cold winter months!

    Pumpkin Ale Just got Done

    SWMBO Slayer extract issue

Pappers, While it falls "within" the range set by the recipe, 1.042-1.047...I've always tended to be on the high side of the range, not barely hitting the minimums. I supposed I'm splitting hairs here aren't I? LMAO

    SWMBO Slayer extract issue

Reading was taken after approx 5 mins of aerating the carboy (re: swirling like crazy). No scorch, brew kettle was stirred by third party through the entire slow pour. Brewed at approx 3.5 gallons, then topped off to just above the 5 gallon mark. Projected SG was 1.042-1.047, though most in the...

    SWMBO Slayer extract issue

So I ended up with a paltry 1.043-ish on my SWMBO Slayer I brewed last night using the extract version of the recipe. Pretty bummed out...how could that have happened?

    SWMBO Slayer Questions

Kanzimonson....thanks for the heads up...looks like I'll be heading back up to the LHBS and swapping the torrified wheat for the carapils. Should I plan on a 1:1 on the carapils? 8 oz?

    SWMBO Slayer Questions

I don't have an AG setup, and since I'm unfamiliar with that process, I'd rather not jump into that yet, as my brew day is tomorrow. Can I still do a partial mash for the torrified wheat using my extract gear? If so, how?
