    Finally got a logo made

    The roots are not supposed to exactly mirror the tree. The logo is that of the "World Tree" or "Yggdrasil". It is the tree from which the Norse God Odin hung himself during his self-sacrifice. My Boxer pups name is Odin...so I wanted the name and logo to reflect the Norse background of my pup...

    Uhmmmm...Yes. Check the FG of the Hornsby. That way you'll know what sweetness you like in your cider. Crash cool your Graff once you hit this FG. It's going to be an experiment...but.

    Pumpkin Ale Just got Done

    Any reason why you guys are so anxious to get the beer off the yeast cake and into a secondary? 9 days in the primary doesn't seem like enough time to let the yeast mellow everything out. Seems to me you're rushing things. Relax. :cross:

    Graff is supposed to be sweeter than Apfelwein, which is why Brandon made it was it not? I wouldn't worry about it being not sweet enough.

    The recipe calls for something around the 6% AA range. Cascades have a definitive taste and nose to them, that's for sure. LOL It shouldn't matter at all, I use pellets.

    What kind of hops did you use? What were the AA%'s? The wort wasn't bitter in mine at all, of course, I used a low AA% Fuggle too. The goal of the recipe for me is a hard cider, not a beer.

    So I'm boiling away the wort, and as I was half way through, I realized I only had Extra light DME left over for this recipe. No big deal...then I only had .85 lb of the extra light DME. So I subbed the remaining .15 of a pound for dextrose. The rest of the recipe including the 1 lb Amber DME...
