    I have used Nottingham in most of my beers. I've never noticed a musty flavor. Maybe that is from the grains. As far as finishing dry, that's an easy fix...just mash higher :) I usually mash at 154-155 when using Nottingham and my beers usually finish around 1.012-1.014, or right around...

    I can't vote for either one. I personally think you'd be better off with a keg. You can get one legally from Sabco for ~100 with the lid cut out. And you can put weldless spigot and thermometer on it for about $50 more or so.

    Well, How do you know when the last 3 days of fermentation are? Just wait till you reach your final gravity or a few points within, then throw them in.

    If you'regonna go with a cooler setup, 10 gallons is recommended. You can use a 5 gallon cooler, but you can't really do any beers over 1.060 OG.

    Bottling automation ideas

    If you get a bottling wand, make sure you get the SPRING TIP one. I got the one without the spring in it and the damn things gets stuck open sometimes and spills beer all over the place.

    FG 1.030 too high?

    I think other than stuck fermentation, the only other side effect of underpitching is possible Diacetly flavor from the yeast not being able to clean up after themselves. I dont know of any other side effects, but there may be others.

    Here is a list of things for Hal Simmons to do: 1. Read the STICKIES. 2. Never trust the air-lock for an indication of complete fermentation. 3. Relax... 4. Be patient 5. Take a Hydrometer reading in a week and see what it says.
