    So I've had my 5 gal of hard apple cider fermenting away for a little over 2 weeks, bubbling slowed so last night I racked it to my secondary... It's going to be pretty strong, ABV is currently around 11.9% I gave it a little taste and think something's a little 'off'.. It was sour, almost "dry"...

    I guess I'll bottle a few and put them somewhere in my basement for a few months from now and try again

    I'll keep that in mind. Should I use my better bottle as a primary or did I just waste $30 on that? Funky flavors is one thing, but I had to spit this stuff out. I gave it a second try and nearly gagged. :(

    no way.. there's no coming back from that. :D I tried to fool myself that it was OK when I transferred it the first time, I'm not going to try that again.

    No it was not sulfury, I definitely would have recognized that flavor. .... EDIT: I don't know.. perhaps a little sulfury... not overpowering though, mostly sour/rotten...

    Nope used the regular ale yeast in the kit.

    I brewed it and put it in my primary for about 5 days. Then transferred it to my Better Bottle (secondary) and left there for almost 2 weeks now. Then just now was about to bottle. Come to think about it, the only think I may have done wrong this time was I may not have gotten the temperature...

    So, I'm not exactly a beginner.. I've brewed 4 extract kits from Brewer's Best previously and they've all turned out excellent! Tonight I was transferring my 5th brew, a Kolsch kit, from my secondary to my bottling bucket and gave it a quick taste test as I usually do. I nearly fell over...
