    Upcoming porter

Thanks for the input. I know the hops are a little odd, but I'm stretching it out there to see what happens. That Bully that I was mentioning uses magnum, simcoe, ahtanum, and cascade, so I figured I might try some other American varieties. Oddly enough the HopUnion variety databook lists...

    Upcoming porter

First of all, I'm sorry if this is breaking a rule, but I posted this in the extract brewing section and got no response, so I don't know if this just sucks as a topic or if it was in the wrong section. So, sorry for the double post but I've got a couple questions for the wisdom of the panel...

Anybody else stuck on an electric stove?

Thanks a lot for the tips. I hadn't heard of the late extract method, I'll give it a shot. I'd been using mostly DME when possilble and always using extra-light, particularly witht the LME, but this should help get it right. THanks again for the help.

Anybody else stuck on an electric stove?

I've been brewing w/ extracts/ specialty grains for little over a year now while living in an apartment. I'm satified with my results for the most part as far as flavor and what not, but b/c I'm on an electric range, I've been getting color waaaay off. I know this is to be expected...

    Shakespeare Clone... Opinions?

Thanks a lot, looks pretty similar to the others I've seen. I was pretty much trying to get affirmation on going soley with cascades for the hop bill. Thanks again.

    Shakespeare Clone... Opinions?

I've been wanting to get the best I can out of creating a Shakespeare stout clone while rogue still has their pacman yeast available. I know that AHBS sells kits for they're version, amd I've looked for a couple of other ideas and am wanting to try to compare. Does anyone care to give me the...

how long to wait after bottling?

I concurr with a couple of weeks. I usually sample in 2 weeks and find most of the time that every progressive week that I can hold out from there gets better and better.

Pitching when wort is too warm (a little paranoid)...

Thanks to everyone for the reassurance. I woke up this morning, and the primary is bubbling away, so it looks like the strong yeast are going to work. I'll keep an taste out for the esters, though. Thanks a lot.

Pitching when wort is too warm (a little paranoid)...

Also, if it helps, I tend towards just a simple pot immersion method, stirring in the wort in an ice bath for while, but end up getting paranoid that its gonna get contaminated somehow, and pitching a bit early just so its sealed and done with...

Pitching when wort is too warm (a little paranoid)...

Ok, I know this is a bad deal, but I've got myself into a bit of a problem. Pretty sure I ended up dropping the yeast in to a batch of wort that was considerably higher than room temperature. Not sure of the temp, but I'm thinking around 85-90. I was brewing a dead guy clone, and the sg was...

    shakespeare stout

Shakespeare is definitely up there the best, never tried brewing it, but am looking into as well. There's a homebrew shop in Tulsa, OK called High Gravity that sells all kinds of stuff on their website, www.highgravitybrew.com They've got a extract/specialty grain kit based on SS, that looks...

    Top five favorite beers

Gotta go with... Rogue Shakespeare Stout Fuller's ESB Bully Porter (I'm from KC, what can I say?) Boulder MoJo Fuller's London Porter In no particular order, and with a number of close 6, 7 and 8's to say the least, tough to throw out absoute favorites, but these are up there. Also...
