    Doing my first wine

    a week to go before bottling and the fining has worked, took a sample and the wine is crystal clear. SWMBO and I split a glass and it tasted very good even though it needs a couple months of bottle aging yet. And what a kick, wow, this is some serious alcohol content.

    Batch too Bitter....

    I had a batch that would strip paint, it was so bitter. It was drinkable after a month and after 2 months it was quite good. Time is your friend, just set it aside and forget about it for a month or so.

    If you want to filter you need to keg. You need the yeast in the bottle to make the CO2 and then it falls out. In a keg you pressurise the system and force the gas into solution.

    While the plastic is more permeable to oxygen, the amount would be of no consequence. You are dealing with molecules of oxygen, the container is also somewhat pressurized which should negate the permeability. I'd have to do the partial pressures math to be 100% sure, and I'm too tired right now. ;)

    I've found that using pantyhose to hold the hops works very well, certainly better that those hops bags.

    Draw a sample into a container taller that the hydrometer, and put it in to float. One scale will be labelled SG that is the one you want, take the reading from the scale and write it down. You should have recieved instructions with the tool and on there will be a temperature correction table...

    I racked into the secondary today and have a very nice, deep maroon Valpolicella going. Ended up with about a 1/2 gallon more than I could put into the carboy, so the wife and I both grabbed a cup and started dipping some out to try it.     Sanitizing the racking cane

    I sanitize the bucket/carboy what have you with iodophor and then rack to another container. That seems to do the job quite well.

    Iodophor

    Put it in, swish around and pour back into a jug or pan depending on what else I have to sanitize. Let Drip dry and use. I don't worry about the little bit left.
