    Dry Yeast

that's my thought - I want to brew a Wee Heavy that I did last Christmas that used Edinburgh yeast WLP 028. I suspect that the yeast contributes more to fruity, malty types ales - but I'm not sure. I supose I should just try it - I was thinking of trying Safbrew T58...

    Poll: Are you a musician?

wow - that's a high proportion of musician brewers - or perhaps musicians are disproportionately attracted to the poll? Bass player and brewer http://www.fatpotatoband.com

    Dry Yeast

When I began using dry yeasts early this year - I was carefully following the re-hydration instructions. After 3 batches - I did my 4th without re-hydrating. I just sprinkled into the wort - waited 10 minutes, then swirled the carboys. It started fermenting just as fast and attenuated just as...

    Dry Yeast

I'm totally sold on dry yeasts now. I've made about 20 batches with the new fermentis and Danstar yeasts - and just started lagering a batch with the new W34/70 Weihenstephan strain. It's great to just pitch and watch. No starters, or oxygenation - great. So - my question - how much flavor...

    Too Warm to pitch

I didn't cool my wort down far enough. It's sitting in the carboys at around 90F. What should I do? Leave it over night to cool? How does wort like sitting without yeast in it? Ian

    Saflager S-23 Usage

What temp did you pitch at? - the blurb that comes with it says to only sprinkle directly if the temperature is above 20C.

    Saflager S-23 Usage

I use it regularly - 1 pkt per 5 gal. I don't bother to re-hydrate anymore. I tried it both ways - it didn't make any difference. I pitch the yeast by sprinkling directly into the wort - making sure the yeast and wort are at the same temp at 74F. I get active fermentation in 12 hours then...

    Memorial Day Brewing.

Well, if you want to try something different, and you like IPA - try a Black IPA. I don't know about the rest of the world, but in the Pac North West, black IPA's are becoming more popular and there's now talk of adding a BJCP category for it (according to one of the micro brewery brewers I...

    Coiling Copper Tubing

Yes, good idea- it's a little smaller than 10", but that's probably OK. I could bend the vertical piece first and leave inside the keg, while I coil around it. Thanks Ian

    Coiling Copper Tubing

I want to coil 50' 1/2" refrigeration tubing for a 10g chiller. Any suggestions on what to use as a form to bend the tubing around? I just can't seem to find anything 10" or so in diameter. It needs to be something with a hole in it or hollow so that I can bend the exit upright piece first then...

    Brewmometer through 10g Cooler?

Will the 3" stem of a brewmometer reach far enough ino a mash after going through the wall of a 10g cooler? Anyone use this setup? Ian

    Cooler Thermometer Question

I want to mount a dial thermometer into my Rubbermaid 10g cooler through a bulkhead fitting. Can anyone tell me if the 3" stem type thermometers are long enough to reach through the wall far enough into the mash to get an accurate reading? I know that there is a dial thermometer with a 6"...

    Rims Return Manifold

I'm sorry if this has been asked before - but I couldn't find it. I'm working on my RIMS today - what are you using for the wort return into the MLT during the re-circulating phase? Do you go through a sparge arm, or just add the sparge arm when it's time to sparge? Or do you just have an...

My Rubbermaid Cooler Rocks - Literally

Just ordered it from ACE. The bottom is bowed out (convex on the outside) slightly, so it rocks and doesn't sit firmly on the base. I was going to take it back and ask them to change it and order me another one. But do they all do that? - thought I'd check before I send it back. Ian :(

    RIMS Heating Tube

The sensor on the Ranco is not threaded - any ideas on getting it in the wort flow? I was thinking a 1/2" T on the RIMS tube outlet with a drilled bung in the "T" with the thermistor inserted into the bung's hole. Any other suggestions - I might try the Ranco first if I can get one cheap on...

    Papazian and Palmer all wrong?

I don't know that anyone is saying that it's "wrong" in the literal sense. It's just not essential to do it. You can keg a beer at 4 days direct from the primary if you want - especially if you use Safeale 05 dry yeast or Nottingham. It will be beer, and taste OK - at least one well known...

    Inexplicable drop in mash efficiency

It was the sparge - I did sparge out at 168 on previous batches, and now that I check my notes - I don't think I did - I bet that wast it. Thanks! So to "why step mash" - well to answer that, I have found I can get much better mash control with a step mash. By changing the times mashing at...

    My RIMS job

That looks like what I was intending to do - only where you have your plug, I was going to put a 1/8 bushing, to mount the thermocouple. Where are you intending to mount your thermocouple? Ian

    Where to buy coolers?

I tried all of the suggested stores - no 10 gallons - perhaps it's not "cooler" season. I'll try ordereing hrough ACE to my local store - thanks for the suggestions. Ian

    Inexplicable drop in mash efficiency

I can't figure what went wrong in my last mash. I probably would have shrugged it off except that it's the first time I tried 5.2 PH stabilizer. I brewed a regular brew I've done several times, that I've been getting 75% efficiency out of. 11lbs of 2-row US malt 12oz 80L 8oz Cara-Pils I...
