    Thats an interesting observation. Maybe I will let it sit in primary for an extra week (3 weeks total), and then rack it to secondary for a week. Did you use actual pumpkin, or the pumpkin with the spices in it? I also wonder if letting it sit in primary for an extra week will help all...

    I'm not exactly sure, but if I had to guess, around 12 hours maybe. I pitched at 3:00pm sunday, and when I went to check on it before leaving for work at 6:00 the next morning, (monday) the airlock was bubbling very good, about 1 bubble per second i would guess.

    Thats almost exactly what my reading was last weekend. I was at 1.055. As far as I know I did everything right, but my reading was high also. I guess I need to figure out how to calibrate it. I'm your typical noob, so I still have a lot to learn.

    New to brewing, and this site but currently have 5 gallons fermenting away in the basement. This has been a great resource for me, thanks to everyone who contributes! 25,428 + 5 gal Amber Ale = 25,433 gallons total.

    I've always thought Aces & Eights Brewery would be a cool name. I guess most people would associate it with a dead mans hand in poker, not necessarily the 2 pairs you always split though... maybe I will have to rethink that.

    In all seriousness, I like Patriot Brewing, but since your in the STL, what about something with the arch in it? Could you incorporate that into a logo or something. also, I really like the Red Weiss and Blue name.

    I think you should name one of your brews after The PMC, or maybe you could make an IPA that has 4 types of hops, maybe call it Quads IPA??
