    The beer is HB Saison. The nifty new glass came from a visit to the Ghost town Brewery Tap Room in Oakland. Outstanding beers! Nice flight of tropical IPA’s and this one, Curmudgeon, a bourbon barrel altbier with vanilla notes.

    I start at 64-5 and finish at about 72 F. I’ve never tried to push it towards 80. (I can’t get and stay there. It cools down overnight here.). I’m thinking about it though.

    I’ve used 1762 Abbey II in hoppy Belgian ales. I had very good luck at 64-65 degF. I wanted more ester-y flavors, so I switched to 3522 Ardennes, my current favorite for Belgians. Good luck!

    Side by side between Leffe Blond and my first go at Revvy’s Belgian Blond Leffe clone. I couldn find WLP 530 and used Imperial Napolean. The latter seems to want to make more Saison like ale. It’s tasty, but the Abbots don’t have to fret about their 780 year old recipe. 😜

    Belgian ale, I'm trying and failing.. but now?

    Thelonius is one of my favorites, too. It’s a bit strong, but worth it. My favorite Dubbel recipe uses no dark roasted malt, but uses D-180 Candi Syrup. It’s quite special - no burnt notes. It has Maillard conversion flavors of dark fruit like cherry and plum in layers.
