Randy Mosher's Radical Brewing is a good read. Just make sure to go to his website if you try his recipes. Some have incorrect numbers in them and corrections are shown on the website. Great book with lots of great insight. His English Brown is in my fermenter right now.

No I don't work for the college. Just seems it would be very difficult to present a business plan to banks and county commissioners who are the same people who want keep alcohol out of the area.

I had overshoot problems in my freezer as well using a thermowell until I added a computer fan. This helped a lot but still wasn't perfect. I started pushing the fermenter against the wall of the freezer and my temp hasn't varied from my dual Ranco settings in 2 years. From pitch time to...

Dennys 1450 gives an awesome mouthfeel in dark beers I have found. I'm fermenting Denny's Rye Ipa recipe with it now hoping for the same.

Do you have a fan running to circulate the cold air? Is your carboy touching the side of the fridge if your coils are in the side? Both of these things solved my temp swings in my chest freezer. Also added a thermowell for the probe, but not sure if that helped. My Ranco is now spot on temps...
