    Fermentation definitely hadn't completed. After I found my stopper and airlock I immediately washed and sanitized. Then replaced, fermentation took another day and a half.

    Every single beer was carbonated evenly. Different size bottles too. I did add priming sugar to secondary. I am thinking temp was to high. Thanks for the food for thought, it will help me pay more attention.

    OG seems kind of low to my mind

    I suppose mixing yeast is not a good ideal? Meaning I could add ale yeast Safale s-04 to the mix. 5 gallons total, used 1.5 gallons to boil, poorest wort into 2 gallons of water and topped off to 5 gallons

    Made edit to statements hopefully it will help. I under stand what you were saying about top off water and that may be the case. I was going to use an ale yeast, but changed my mind at the last moment.

    So I am thinking that the OG will be higher than what it turned out. OG was 1.043. I used 3 lbs of LME Amber unhopped and 3 lbs of DME Amber, 2 Ozs of Styrian Golding after extracts added and 1 Oz of U k Fuggle at 30 min. Total 35 Minute boil. Cool down to 85 degrees Fahrenheit over 30 minutes...

    Hello from N.R.H. Texas

    I have brewed about seven batches so far. All being DME and LME. Also, made a beer with two pounds of DME and three and a half pounds of cane sugar. I wanted to see what all the hoopla was about with the cidery taste. Now I know and think I'll be sticking with extract or try all grain. Thanks...
