    I've been going this way a lot lately myself. My grain bill is getting to be no more than 4 grains in anything and even then only tiny amounts of some.

    I have tubs of 2-row, pils, and marris otter. I'm seriously thinking about just going to pure 2-row for my base grain for laziness. I do lots of beers that are like 95% that and some Vienna or something.

    Considering how long grain can sit in a grainery or silo before shipping I wouldn't worry to much about it. Once it's milled there's a shelf life but even that is longer than most people really think. I just use rubbermaid totes with a lid for mine, though I generally need to get more grain...

    Proper batch sparge method

    I no sparge 5 gallon batches and batch sparge 10 gallon batches. I mash in a bag and have a fairly accurate volume for my pre boil runnings. I just dump the water in however it gets there, leave it for a bit after stirring it up and then drain it.

    Only real issue is if you're mixing the bottling sugar in you're going to stir up the trub. If you're doing "Bucket -> Carboy -> Bucket" carry on then.

    So I'd get whatever you can get your hands on for 2-row or Pilsner and not stress about the brand of it. Cause I have zero control over the brand of malt i get here.
