    Big hello and Thank-You!!!

I don't have much input on the beer, except that the lemon zest sounds like a bit much to me, but welcome to brewing and I'm glad the US craft brew scene inspired you!

    citra hops?

My experience with citra-heavy IPAs was also a cat piss smell that abated with time. 20 oz bottles had a definite aroma at first but it went away and made for a very, very delicious aroma and taste (only dry hopped with Citra, by the way).

    Good beer luck

I'm enjoying some homebrew and felt the need to share my story, which involves 3 things that, I think, went my way today. 1) I've got so much work piled up that I had forgotten that tomorrow is Independence Day until I was leaving the office and someone said "have a nice holiday". :) 2)...

    New Louisiana brew-head here

Welcome to brewing. This website is a great resource for learning all things beer. I'm glad to hear that there are some HB suppliers down there in LA. I'm from Natchitoches and get back home as often as possible, which is never often enough. And finally, of course, Geaux Tigers!

Cabot Habanero Cheese - the pinnacle of cheesy pain

I've got half a block in the 'fridge that I'll enjoy with some black beans for lunch today. Great cheese. hadabar - "Had anyone put habaneros in their beer yet?" Triangle Brewing (Raleigh, NC) made one that was served at last year's annual pepper festival in the town I live in (didn't go...

    Spiced Coffee Porter (first AG)

Coffee stout with coriander and orange peel sounds like an excellent winter beer, let us know how it turns out. I don't have any input into your recipe (I have little experience in formulating my own) but you have definitely inspired me to get some good dark ale a-brewing. :mug:

    North Carolina Craft Beers

My wife checked out Natty Greene's while at a conference in G'boro and loved it. She's got great taste in beer and breweries. While I've never been to Greene's I would strongly recommend driving to Winston Salem (prob less than 30 minutes) to check out Foothills - some of the best beer in the...

    Gumbo

I didn't read all the responses above, but smoked meats are great in gumbo. Tasso ham is excellent in there, but a couple smoked ducks can't be beat. I happen to have a small pot of smoked chicken gumbo cooking when I stumbled on this thread. As someone mentioned, or probably several have...
