    Guess my Water

    I never trust those paper ph test strips. When I tried them I did 3 tests in a row and every one said the ph was different. I don't know what to believe. I just figure if the water doesn't taste like acid or on the other hand slime like texture, then it has to be good enough.

    Winter Brewing

    I live in N. Illinois and my basement is around the same temps. After a day or two of fermentation I will shake the carboy a little to help the yeast kick back in if it has slowed at all. A 60 degree fermentation is a great temp and doesn't leave you with alot of off flavors.

    Yes some more info would be nice. My fiancee and I have designed many great looking labels (will post some tomorrow) and know photoshop well. She is a graphic designer so that really helps. I'm sure we could work something out for getting you a template. Just let us know what your ideas are.

    Beer Changing Colors??

    Thanks for the info. I will be bottling soon so I will find out how these taste. The one that really gets me is the octoberfest that went way dark. The settling does make sense but for the octoberfest to go stout color doesn't seem to make sense. I'll keep you posted on the taste.
