    Brwery sizing question...

    What I plan on doing is use my large kettle for the majority of my brewing, but install an element in the eight gallon kettle I have now to do five gallon batches. For the cost of another element, a weldless kit and a little wiring it will be easy to swap out kettles to do a smaller batch.

    I think I am going to shelve the high powered RIMS tube idea. As nice as it would be to remove the HLT from the equation I think in the long run I may be better off going with a three vessel system.     Christmas Ale to Age

    A little Special B is always nice, I would sub it for the C120. I would use vanilla bean(s) instead of extract, unless you are making your own extract from Bourbon vanilla beans and vodka. The rest of your spices look good, but to be honest for a beer that will age for a minimum of 14 years...
