    Gravity error

I'm starting to loose all faith in my specific gravity measurements. I just brewed my second batch (a strong ale) and this time OG was high, 1.082 vs the recipe 1.070ish. I figured I just got more wort than water. It's sat in the primary for 3.5 weeks and I just bottled it and the FG was 1.031...

Leave on blow off tube or put on air lock?

Had a blow out yesterday so a scrambled to rig up a blow off tube. It vented heavily into the night. I checked on it this morning and it has slowed to a bubble every 5 to 10 seconds. Should I put the air lock back on or just leave it with the blow off rigged up, or does it even matter.

    Wow! It tastes freaking good!

I have my first few bottles in the fridge from my very first batch... I'm almost afraid to try, for fear I'll be disappointed; I'v really been looking forward to getting into brewing for a while. I've got a cold now, but as soon as my taste buds are back in full operation I'll give 'er a taste!

    Foaming out the air lock...

Thanks guys. I was away today and told my wife to put on the foil until I got home. She said it had slowed, so she didn't do it. Came home to a blown off air lock. I'v converted one of my air locks to a blow off tube with a 5/8" hose into a big pot, 1/3 full of water. It's bubbling like mad...

    Foaming out the air lock...

Brewing a Strong Ale and about 20 hours into fermentation it's foamed up so much it's running out the airlock in the top of my carboy. Should I be concerned; anything I should do?

Fg not where its supposed to be after 2.5 weeks.

Thanks everyone. I did use the yeast in the kit but my kit was put together by my local brew store while I waited, so I assume I got in the kit whatever I would have bought off the shelf. I did take an OG reading, but I think I did something wrong there because it read low, only 1.035. I think...

Fg not where its supposed to be after 2.5 weeks.

Followed my kits directions pretty well except I didn't know not to squeeze the grain bag after rinsing it and I mixed the yeast in my water immediately after cooling instead of just sprinkling it on top. The brew foamed like mad and bubbled for two days. I let it sit for a week and then racked...

Racking instructions vs. what is posted here...

the instructions with the kit I bought specify to rack the beer to a secondary fermentor "as soon as bubbling slows", but most of what i've seen here indicates leaving it in the primary for at least a week. Fermenting slowed, pretty much to a stop, after about 48 hours. I may have done...

    Original Gravity

I brewed my first batch today and had a similar experience. I brewed an Octoberfest and it was supposed to have an OG of 1.052, but I measured 1.032. I stirred it really well when I pored the wort over the first gallon in the carboy, but didn't stir when I topped it off. Do you think that's why...
