    Haha I do the same thing, i'm way too impatient: try one bottle at 7 days, one bottle at 14 days, and put two sixers in the fridge at 21 days. Yes, I may be sampling them too early, but ive learned how much beer can change after 14 days in the bottle

    In my limited experience, I can only find one fault in your brewing method... waiting 7 weeks to order supplies for your next batch. :) order it now and buy a second fermenting vessel. Or two. Or three!

    Commercial beers that let you down?

    I really didn't enjoy Sam Adams Infinium. I could barely finish a pint of it. Just too sweet for me (I think, there have been many beers in my mouth since then). I also don't really like Fat Tire or DFH 90m. I like the 60 though.
