i also recommend checking the connection of the racking cane. if the transition is not smooth between the tap and the can, CO2 will be stripped out of the solution, causing the foaming that you're experiencing.

the most experimental brewery that i have any personal knowledge of would have to be Seattle Brewery | Epic Ales in Seattle, WA. it's a 1bbl nanobrewery.

My three tiered system (for just about everything, including beer) is: I like it. It's ok. Yuck. YMMV.
