    i'd try setting the pressure to 4 or 6psi, vent the keg a few times and let it settle, then try again. you can up the pressure little by little until you get the desired carbination. i think 10-12 works for homebrew but is a little too high for a commercial keg.

    I'd take hydro readings 2-3 days in a row to see if it's changing. That's really the only way to tell if it's done. Could be bubbling due to a temp change maybe?

    (New?) Idea for locking out taps

    If you really wanted to keep it simple and lowtech then you could do something similar to the OP, but instead of a electically actuated valve just use a manual one with "Lockout" equipment on it. These might function a bit better than the faucet locks perhaps...
