@Thorrak for connecting the temp sensors, I would think you could just make the current pcb a bit longer, perhaps adding a row of pads to the right of the ESP8266. Then screw terminals or dupont connectors could get used. Or skip screw terminals for dupont and add a double row of 3 pin headers...
