    frustrated with kegging ... why does my beer not appear carbonated?

    From personal experience I find this to not be true... I carb my beers at 30 psi for 30-36 hours and then drop them to serving pressure at 10-12 psi and they do not lose their carb at all even if they sit for weeks. Dave

    Six days seems very short for near complete fermentation. I would suggest giving it another week, but then again the hydrometer will tell you better... The way you describe the taste (keep in mind, that is all I have to go off) sounds about perfect for a Chocolate Brown ale. But then again...

    Adding Lactose will mainly sweeten the beer as it is an non-fermentable sugar. While it can also add to mouth feel and texture, it should be used primarily as a sweetener.

    Just out of curiosity... How much hop character do you want in a Chocolate Brown Ale? Is there no discernible bitterness at all? Does it taste like straight fermented wort? I would say perhaps wait until fermentation is done and then try again. A chocolate brown should be a rather sweet beer...

    I only use secondaries as good storage space for big beers that need extra time to mellow/balance, thus opening up primaries for fresh brews. Currently in secondary are a Barleywine and a Belgian Trippel.

    Banjo Burner Burning??

    Thanks! First AG was a Blond (so if we screwed it up it would be cheap and not too disheartening). We were aiming for a 1.039 OG and hit 1.040. Really no major issues, so we are going to brew a Belgian tomorrow.\ Dave
