    I do leave the lid off for the boil and replace it when I'm cooling. I'm gathering from your comments that it is fine to leave the lid off for the whole cooling process. Isn't there the chance of airborne infection during the period after the temp reaches 160?

    Hops and full boil

    I just bought a turkey fryer and will be doing some full boil extract brews. Most kits, like AHB Nipper IPA which I brewed last week, specify boiling half and then topping up. Will doing a full boil rather than a half boil affect the amount of hops needed to attain the recipe's IBU?
