    A thief would definitely not fit in the airlock hole. You would have to take off the top and use a sanitized thief, autosiphon, or turkey baster to take a sample.

    Alright, I know the line "don't fear the foam!" I'm using starsan for the second time. I put starsan in the carboy, gave it a shake probably 5 minutes before flame out. Poured it out and WOW was there a lot of foam! I let it drain upside down until my wort was down to temp and still there...

    Sweet! Yeah its a nice area, really pretty this time of year as well. As for the off roading - I used to ride shotgun in friends trucks back in high school and have a blast...atvs were even better - but i dont think my little hatchback would much appreciate that sort of treatment :)

    wow! Impressive customer service. I have a 5 gal SS cheapo brew pot now and I'm looking to upgrade. It sounds like the 15gal Blichmann might be the ticket for me as well, as I plan on brewing for the foreseeable future and expect to get into Full Boils, All Grain, and potentially 10 Gal Batches...

    Well they were referring to WLP 004 Irish Red which is what comes with my recipe kit. I haven't gotten it yet, so I'm not sure what the packaging says. I'm sure you're right though - I haven't used an English/Irish yeast before so this would be new territory.
