Without a wort chiller I'd hate to do a full 5 gallons. I did 3.5 for my first brew and it took ~40 minutes to chill in my sink (switching from side to side with ice baths).

Thanks Shooter, I've heard the same thing. Munton's apparently leaves particulate matter in the beer that can float on the top, so it's not even something you could leave in the bottle with a proper pour.

My primary is 8 gallons and from what everyone told me here, it's fine since your CO2 will cover the head space. Secondary is a different issue though, you should have the secondary have as little head space as possible I believe.
