    Nice. I go to Columbus every few months to the shooting range, and to eat at the Canon. I'm working with a Mr Beer kit too... and a small 2-gallon bucket fermenter. Just ordered 5-gallon starter kit from Midwest though. I hope to do my first batch on that later this month.

    over pitching yeast

    If overpitching leads to less esters and shorter lag times (is that right?)... what is the consequence of underpitching? More esters from the yeast? Longer lag times (if you don't use a starter)? Lower ABV in general? Or just a longer time in the primary before it reaches FG? I'm curious...

    Thanks for the tip. No lines on the bucket, but I tried it out tonight. The 2-gallon bucket just barely held 8.5 quarts (with about 1/2 inch of airspace above the water line). I think I can stand to loose a little water without hurting anything. Thanks again.

    Just picked up a small 2-gallon bucket fermenter from a friend. I'm thinking about doing my last Mr Beer recipe in it. What would it do to the recipe if I use all the ingredients, but in less water (2 gallons rather than 2.5)?
