    So who's brewing this weekend?

Update. My buddy will be back from deployment. Nice! Same brewing plan but it will be good to have him back, and of course, watching him getting trashed off of two, maybe 3 beers.

Fess up! How often do you check your fermentation?

I'm totaly there with you, Malticulous. I'll check the air lock at least once a day the 1st few days of fermenation. Mainly to see if it's properly going and also to deal with fermenter blow ups. When will I learn... That's some funny $$$$!

    So who's brewing this weekend?

Doing a Dunkel with my buddy on Fri. We're both Gov employees, so were gonna make use of the time off! He's got the refergeration set up; I have the AG MLT. It will be his 1st AG, my 1st lager. Looking forward to a lot of homebrew consumption! Gonna be a blast!

My post boil hydro test is fermenting!

I'm curious as well what's going to happen to this.

Spice, Herb, or Vegetable Beer Ginger Ale

I've never done that with the anise, but it sounds amazing! I wonder if it would make the anise more potent or just change the flavor profile? I was told to be careful with anise in beer because it can really dominate the flavor if used in large amounts.

Double IPA Dogfish Head 90 Minute Clone

Anyone have any experience with open fermentation? I had my second fermenter blow up today. My 1st was with a belgian triple in a 5 gal carboy with no blow off hose. For my DFH clone I decided on my good old faithful 6 gal ale pail and double bubble air lock. I come home today from work and...

Winter Seasonal Beer Holly (Christmas Ale)

I think you need to do a partial mash for the specialty grains. Otherwise, this is the best iteration I could find using extract.

Winter Seasonal Beer Holly (Christmas Ale)

Bottled this last night. The beer itself tasted great. My FG was 1.010. Add the tea to it and the spice characters definitely come through nicely. Vanilla seems to be the dominant player. I used 1 Tbs of freshly grated ginger. I didn't have a french press, so after boiling everything for a...

Do you want to brew one of the 12 beers of Christmas?

Just read the entire thread! Amazing idea. I'm sad I couldn't get involved (but I actually only started homebrewing in June of this year). I'd love to participate next year, though. Funny how good beer brings people together. :)

Double IPA Dogfish Head 90 Minute Clone

I can't wait to try this recipe. I'm a huge fan of DFH 90 min (and a huge hop head). I agree with scottland about the water chemistry. My water is really soft, so I tend to add 2 tsp gypsum and 1 tsp epsom more as a yeast nutrient (they need the Ca and Mg) after the mash is done. My pH...

Spice, Herb, or Vegetable Beer Ginger Ale

I love this recipe. I've brewed (versions) of it twice for the summer. It's so good on a hot East Coast day. Anway, my 1st time with this was something like this: 0.5 lb Honey malt 0.5 lb carapils/dextrin Steep grains 30 min at 150 3 lbs light LME, 3.3 lbs Pilsen LME 1 lb honey...

Winter Seasonal Beer Holly (Christmas Ale)

Brewed this up on Sunday. My second AG. Went pretty smooth all things considering. Hit 1.082 for the OG. Thanks for the recipe. I can't wait to make the tea and, of course, drink the beer! Cheers!
