    Why not use a lid while boiling your brew?

    Also, in many cases (such as partial mashes and all-grain) you are looking to boil off water! Sometimes it is neccasary to boil for a bit before additions just for boil-off.

    Who has NEVER had an infection?

    6 or so batches in, no infections. But I did sanitize during my first batch with bleach (before reading through most of this forum) and got some seriously band-aid flavored beer. Not really an infection, just gross beer. Considered marketing it as Absolut Band-Aid.

    I brew in a small apartment as well, and I will echo the suggestions to take out the trash ASAP. The grain smells really good for a short perod of time, then it gets pretty nasty. If you use pellet hops and strain the wort before adding to the fermenter: those get nastier, quicker.

    Beer snobs can play beer pong too! :D It is head and shoulders above BMC, and is a satisfying session lager. If I am going to have one or two beers with dinner I generally won't reach for a Yuengling, but it is great for drinking while watching a game, or out at the bar. Easy to order too ;)

    So, transfer the current wort/beer to a secondary, and pour a very dry beer wort onto the yeast cake in the primary? Let the primary ferment out, then combine them? Or just pour it right over the current beer?
