    Bottling mishaps

They are similar to the Grolsch swing tops we can buy here, i am led to believe they work well and you can buy the replacement rubber seals at the LHBS down under. Buy a couple and try them....but brown would be better

    Limoncello

Cant tell you as i am not from around there, but i can give you a simple recipie that is not illegal. 1 liter of Vodka 250gms white sugar 250mls water zest from about 6 lemons. peel the zest from the lemons into a large jar, pour in the vodka and let sit for 10 days add water and sugar and...

    Cooper's Kits - feedback requested!

I've used the cling wrap method on my other Fermenters but the Coopers seals fine.

    Cooper's Kits - feedback requested!

I agree Terry, the coopers kits are damn good, but as i said earlier they do tend to get a bit yeasty if drunk too green, i dry hop my Cerveza's. I have a Cascade Spicy ghost here to go soon. I tend not to rack the simpler brews, just 2 weeks in primary although i have used isinglass in a few...

Should I bottle at day four?

NO!!!!! And Hell NO Did you measure the FG? What was the SG at start? I'm betting the airlock stopped bubbling and you think it is finished, it has just slowed down, if you gave it a gentle nudge it would crank up again a little. Wait until the SG is stable for 3 days, if you bottle in glass...

The problem i have with washing yeast is i can't seem to hang it on the line to dry afterward.

Simple homebrew guide, would this work well?

To be honest it looks like crap... never NEVER use white sugar unless you want a cidery flavor or are inverting it for a Belgian style. I don't know how much a fermentor is in the usa but plastic ones here are about $15-25 USD with a tap and airlock and a temp gauge on the side, it's worth the...

Disapointed in adding fruit.. didn't work

From what i know of the process (never made one) fruit beer is assisted by freezing the fruit first. It causes the cellular structure to break down. I would consider breaking the cherries by pounding them in a plastic bag then freezing them. I wouldn't puree them as afterward you will have...

    Whoops - too much water...

    Whoops - too much water...

Yup i would be tempted to drop in some dme or lme.... say 50-100gms the dme will add alcohol but more importantly it will add body to a watery brew. You could consider dry hopping it around day 4-5 to give a bit more flavor and nose as well.

Took airlock off when bottling from primary...

I don't bother with the towel, just take off the airlock and let it suck.
  14. F

    Should I scrape it off

If you do clean the lid then sterilize it, personally i would leave it alone....

    Cooper's Kits - feedback requested!

Sorry it's a brand here Extra Special Bitter, comes in 1.7kilo and 3kilo cans. The 3K cans make a great brew, when you cut the top off you can see the hops floating on top. tip it into the fermentor with 22 litres of water add the yeast... cant go wrong really. I did a Hoegaarden clone 2 days...

    Lid popped

Yes Orfy but not everyone wants a lambic...controlling the environment is important for newbies. Relax positive pressure is good, pop the lid back on and have a beer.

    No activity after 3 days

Airlock activity depends on yeast strain so it's only a variable indicator Apparenty Autolysis is very rare in HB. Usually a week in the fermenter is too short, there is really no need to rack to a secondary unless you want to yeast harvest or fiddle with the brew in some way. I usually give...

    Re-Carbonating?

you could try gently rolling the bottle to stir the yeast up, re bottle with a very small amount of dex to kick off a recarbonation

    bottling

If you are really worried about it research racking to secondary, i generally don't do it. Add finings or gelatin, to help it settle but in the end you need yeast to carbonate the bottle properly. I find with most brews in the bottle for over a month the yeast sticks to the bottom anyhow. Pour...
