    A NEW Smoker!!!

    Here's my tips: Beef is more of a challenge than pork. Beef can become bitter/dry with too much smoke/time. For a first effort, try smoking for three hours, then braise w/liquid/sauce in dutch oven in your stove at 300 until done. This will take awhile. Good luck, it will be great!

    I noticed (completely by accident the first time) that if say, 80% of the way through my wort collection, that if I sparge too slowly and allow my grain bed to compact, say by half, and continue to sparge but on the compacted bed, my efficiency goes from my average 75-80% to about 90%. I did...

    Low oxygen water

    Has anyone tried to make very low <1ppm oxygen water at home? I was wondering if hooking up CO2 to a diffusion stone and pushing the CO2 through the water while it as boiling would mimic the process breweries use?

    What do you use as a fermenter?

    What are some of the mistakes you made...where your beer still turned out great!

    I bottled half a batch, realized I forgot the priming sugar, "decanted" all the bottles back into the bottling bucket threw in the priming sugar not dissolved in water and stirred it up! Turned out ok.
