    NITRO!

    Got a regulator, got the stout tip for the intertap, got my beer gas today. 12% RIS with vanilla, cinnamon and a hint of nutmeg is chilling and carbing now. It's on 30 PSI CO2 now, will switch to beer gas Sunday. Think we can sample Monday, but these thick, viscous stouts always carb slowly....

    The time comments are interesting. It makes me wonder if any of the brewing software out there takes mash time into account when predicting attenuation. I'm pretty sure Brewer's Friend will change FG if you tweak the mash temp.

    Vorlauf vs recirculation

    One other comment regarding recirculating. That's typically for the bulk of the mash duration and would require some sort of heat source to maintain mash temps. Without that, the temps would fall pretty quickly versus just letting the mash rest.

    I generally like a higher pH on my stouts. I usually target around 5.5-5.6 because I think it smooths out the final product. Lower pH in a stout comes across as "harsh" to me.
