    Beginning Brewer Questions

You should definitely dilute the star-san with water according to the instructions. I add the appropriate amount of star-san to a gallon of distilled water... then I add that to an empty spray bottle. This makes it so I always have sanitizer on hand and ready to go without mixing every time...

Results from juice, yeast and sugar experiments

I'm on my 4th batch of cider... started with two different 1 gallon batches using S-23, then switched to a 6 gallon batch using nottingham, and now I've got another 6 gallon batch going using S-04. The S-04 has a lot more apple flavor than the nottingham had at the same SG. I crashed the...

    GROUP BREW: Strawberry Mead

I have 2 separate 1 gallon batches (in glass carboy) going that I started about a week apart from eachother. I started the first batch in my basement and it took 4 days total to start seeing activity. I then moved it upstairs and started my second batch upstairs from the start. Anyways, they...

My bottled cider has a nutty taste?

It is hard to tell what kind of nutty taste it is, but I guess I would say more of a cashew taste, because it isn't really bitter at all. I am kind of getting used to the nutty flavor, but would prefer it wasn't there. Hopefully I will have better luck with the S-04 Apparently I did a REALLY...

My bottled cider has a nutty taste?

Even if i use a plastic bottle as a carb tester and move them to the fridge as they get firm... and then leave them there indefinitely?

My bottled cider has a nutty taste?

This is the second batch I've bottled around 1.014... but the other was only a 1 gallon batch and i used s-23 yeast instead of nottingham. I looked around online last night and found out that for whatever reason... nottingham gets a nutty taste when bottled. I have a 6 gallon batch going now...

My bottled cider has a nutty taste?

I bottled my 5 gallon batch of cider a week and a half ago... I used Mussellmanns cider and Nottingham yeast. My OG was 1.060 and I cold crashed it at 1.014. I let it sit for 4 days after crashing and saw no activity. I then added 3 ounces of corn sugar (boiled in cup of water) to my bottling...

    Bottling Tips for the Homebrewer

Anyone have any input for my over-carbed here after 9 days conditioning and 2 days in fridge? Should I just move all of them to fridge now? 9 days to over-carb seems fast

    Welch's Grape Juice Wine

How long do you typically leave this in secondary before its drinkable? I''m guessing since my OG was super high (1.140)... this will need to settle for quite a while in secondary. Any idea how long? Also, when I eventually bottle it... will it need to age in the bottle for a while, or is the...

Bottling for carbed cider - when to bottle?

If you have a way to cool it down (refigerator or large cooler/bucket with ice/snow)... you could cold crash it. This way you can stop the fermentation before it eats all of the sugar. I just cold crashed a 6 gallon batch 2 weeks ago at 1.014 and it stayed there for a week after until I...

    Bottling Tips for the Homebrewer

I just bottled my first batch of beer last week Monday (1/25/10). It was a coopers Pilsner pre-hopped kit, and according to the info I read in this thread, I decided to test one after roughly a week . I set a bottle in my fridge Wednesday and decided to taste it this evening (9 days...

    Welch's Grape Juice Wine

Yooper... did I do something completely wrong? My OG was 1.140 on 1/2/10. I used 1/3 of a packet of D-47 yeast... and on 1/30/10 my SG was only down to 1.044. So I dropped just under 100 points in around 4 weeks. As I mentioned in my previous post, it is at cold temps in my basement...

    Welch's Grape Juice Wine

Yooper... do you pay attention to the SG when racking? Your recipe says to primary for 30 days and then secondary for 30 days. I am fermenting mine in my basement at around 55 degrees... so I imagine mine will take longer than your recipe.

    GROUP BREW: Strawberry Mead

I only did a 1 gallon batch... so I am using a 1 gallon carboy. I know once I take out the 3 lbs of strawberries (and sludge)... I am going to have a lot of headspace. There isn't any problem topping off with water is there?

    Cider time to bottle HELP

I don't have a huge wealth of knowledge... like many others on this forum do... but I would definitely recommend racking it to secondary and crashing (refrigerating) for a few days to drop the rest of the yeast out. Then from there you can rack it off the lees and bottle it up. Do you have a...

    GROUP BREW: Strawberry Mead

When I get to 1.030 and rack off the strawberries... should I top off with water to leave as little headspace as possible?
