Pumpkin ale: add more spices at bottling?

Some excellent advice here... As to what level of spice I'm looking for, I'd like to hand somebody a pint of this beer and have them recognize it as a pumpkin ale, but I don't want it to be too in-your-face. Right now I don't think I would call this a pumpkin ale if I didn't know what was in...

Pumpkin ale: add more spices at bottling?

About a week ago my friends and I brewed up a pumpkin ale based on this Charlie Papazian recipe: http://www.homebrewersassociation.org/pages/community/blog/show?title=beer-recipe-of-the-week-cucurbito-pepo-pumpkin-ale It calls for 3.5 tsp at 10 minutes before flameout. The wort itself smelled...

    Refractometer problem?

Can refractometers be damaged if they get too hot? I accidentally left mine in the sun for ~30 minutes and now I'm wondering if it's the source of my problems. It's one of the those cheap ones you can get on eBay shipped directly from China. I brought it inside to let it cool back down to room...

    Brooklyn Blast Pale Ale ???

Thanks! I haven't brewed it yet... I decided to get seasonal brew out of the way (Pumpkin Ale) before getting to work sourcing all the hops for this. It should be straightforward to convert this to extract, especially now that liquid Maris Otter extract is available (Northern Brewer sells...

    Brooklyn Blast Pale Ale ???

This is one of the best DIPA's I've ever had... The crazy thing is that it drinks like a 5% beer even though it comes in a 9%. I had it at the Brooklyn Brewery tasting room so it was about as fresh as you could get, and the aroma was just amazing... like I'm standing over the brew kettle right...

    Brewmasters Warehouse

Any chance of carrying Wyeast 3763 Roselare Ale Blend for making Flanders Reds, etc.? My only complaint about Brewmaster's Warehouse is that they're SO great that I can't justify shopping at my local homebrew shop anymore. :) The ability to order custom recipes (with ingredients in 1 oz...

Worst Commercial Beer You've Ever Had?

This isn't fair, but I picked up a Belhaven Scottish Ale at my local liquor store and it was so skunked and undrinkable that I returned it to the store... first time I ever did that. It had everything working against it: imported from Scotland, clear glass bottles, and probably sitting on the...

    Cool case for dual stirplate

So we got this cheapo 300-pc poker set a few years ago at a Christmas family gift exchange, and it's been used maybe once. I've been trying to find a good case for my dual stirplate and this looks like just the ticket. It's a pretty sturdy aluminum case that's large enough to handle two flasks...

$18 Dual PWM Dimmer / Speed Controller

I was just looking around on All Electronics and found that they are selling a dual PWM dimmer control module for $18. I just bought one to create a dual stirplate, using 12V fan motors. I've built PWM controllers in the past but these just look so much easier.

Looking for feedback from 3 gallon brewers

I just got a couple 3 gallon better bottles for this purpose. Can anyone recommend a minifridge that will hold two 3-gallon carboys comfortably? Right now I don't have the space for a large fridge and I can only brew in the winter and spring before my basement heats up too much to do good temp...

Rubbermaid 1.5 gallon containers for fermenting

I agree that the batch size is really small, probably too small, but... My friends and I are getting interesting in SMaSH brewing and learning how to identify different hop and malt characteristics. I want to brew five different batches with a single malt and different hops so we can taste them...

Rubbermaid 1.5 gallon containers for fermenting

I just picked up a few of these 1.5 gallon Rubbermaid Cereal Keepers at Target for $5.25 apiece for doing some small 1-gallon SMaSH batches. http://www.amazon.com/Rubbermaid-Cereal-Keeper-Clear-Red/dp/B0014CX8ZW Does anyone have any experience with these or see any problems using them...

    Southern Tier Choklat flavor

In this thread, Lodovico says that they use pure chocolate extract at bottling. Maybe Southern Tier uses the Belgian chocolate powder to create the extract, rather than adding it directly to the wort  I'm guessing you could make your own chocolate extract by putting some cocoa...

    Southern Tier Choklat flavor

I'd love to see a clone of this and some other Southern Tier brews as well; Creme Brulee is another real standout. Keep us posted on how your recipe turns out. A Google search for Southern Tier recipes doesn't yield many cloning attempts. Are their brews just not well known, or are their unique...

    Pliny bottling nightmare tonight!

Thanks for the tips! I love your setup with the wand attached directly to the bottling bucket. I'm going to add a bottling bucket and a vinator to the top of my wish list. In the long term I'd like to do kegging but it's going to take a while for SWMBO to come around to the idea.

    Pliny bottling nightmare tonight!

Tonight stepped up RDWHAHB to RDWHAJD (Jack Daniels!) :cross: I bottled my Pliny clone tonight and man, what a mess. I decided to use my new auto-siphon, which has worked well for racking from one vessel to another, but it is much tricker to use with one of those spring-loaded bottling wands...

AHS commerical brew kits observations and questions

I can only speak to AHS's Pliny the Elder extract kit, but they follow same hop amounts and schedule as the all grain Pliny the Bastid recipe. This made me wonder if their extract recipes are really optimized for partial boil. I don't have a pot big enough for a full boil, so I did the best I...

    Different kind of buzz??

I've noticed this effect not with homebrew specifically but with different classes of drinks. Red wine often makes me feel tired and irritable whereas a good clean vodka or gin relaxes me. Some high ABV brews give me a "fuzzy" kind of feeling without much buzz... hard to explain. Most good beer...
