    I've had some good results with the LEM seasoning kits. I also have several "made from scratch" recipes for Summer sausage, bratwurst, and snack sticks (slim Jims). I don't have them handy but I'll post up a few later. I generally make 20 pound batches, which might be a bit much.

    I've not had wild boar. I'd be willing to give it a try though. boar and hogs aren't a problem in MN, thankfully. It sounds like they are quite the headache. I've heard bear is one meat that really needs proper care from field to plate to be any good.
