    Cider carbing nicely...in secondary?!

    Your cider isn't "carb'ing" really. There is always some carbonation in beer and cider once the yeast has started fermenting. Those are the bubbles you see when you put it in the hydrometer jar. You can find more info on CO2 levels of liquids with some searches and reading past threads...

    The clear ones just had the yeast flocculate (settle out) faster. Swirl the bottle a little before pouring and you'll get your yeast back into suspension so all your wit beers will be cloudy (the way they should be :)). Or use about 1/2 cup [CORRECTION: should be 1 Tablespoon] of flour at end...

    You can boil it if you want - a short 5-10 min boil shouldn't have much effect... just make sure to stir frequently so that the sugars don't caramelize. Personally I wouldn't worry about infection from bulk sugar - the yeast take over so quickly that even if there are a couple bugs in the sugar...

    I like how you'd "have to" do two batches if you recut the lids to bring two more fermentors online. Given that kind of choice I think that's what you should choose. : )

    That's not an extract recipe, I think you got a partial mash recipe. It's easy to convert to extract though. As TexLaw said, don't use the 2-row, just increase your extract quantity a bit. This is a pretty advanced beer for your second brew - if I were you I'd do a few more standard beers...

    Okay thanks. Sounds like a good plan. I'll either do a big starter or do 2 packs of 11.5g dry yeast. If you have any yeast recommendations too that'd be useful. I'll probably use S-05 but maybe if the FG doesn't get low enough I should think about finishing with champagne yeast or some other...
