    I don't think I'd personally attempt it just based on my love for old bay covered crabs. Not sure hown that flavor would benefit a beer. Maybe a chocolate chile stout? Also the crabs tend to impart flavor to the water below through drips. Ever notice how the water clouds up a bit?

    When I was doing them frequently, we would hold at a 45 and drip 95% ethanol until the runoff just turned clear. Time wise would be about ~5 seconds. This was easier to visualize than adding drops on a horizontal slide and waiting for a set yime.

    How are using gelatin (if at all)? The colder you can get the beer before adding it, the better.

    I suppose you could do like winemakers do and add campden and k sorbate. Maybe look at the recommendation for wine. Then dont worry about the filter and carb in the keg.

    I can post some more tomorrow, but my cascades are already throwing cones and are about 11 feet tall.. I guess you can grow them in Florida, lets see how they handle the summer. They came from GreatLakes and were put in the ground on 2-18.

    Any fix for undercarb'd bottles?

    If and when you decide to dump them into a keg, I'd make sure to purge with CO2 first! Otherwise, it seems your temp is fine and you may have miscalculated priming sugar.

    Did you adjust for the temp? A 1.010 reading at 70 with a hydrometer calibrated at 60 would be slightly lower than actual.
