    Experimenting with liquid maltose

Brewing with Liquid Malt Extract I have obtained a 4 KG sample of Liquid Malt Extract from an importer, and am planning to try it out as a replacement for sugar to brew a batch of Cooper’s Bitter (Alternatives in stock are Coopers IPA and Coopers Real Ale-in case anyone feels they would work...

    Bottle priming error

Good point! Yes, it did froth quite violently, but there was always a three or four second pause after adding the sugar and that just gave enough time to get the tops back on, expel most of the air from the top and tighten down firmly!

    Bottle priming error

Thank you to all for your useful ideas. As the responses fall into two categories: 1 Do nothing and wait upon events 2 Open the bottles and add a bit more priming sugar. I went down both routes and added extra priming to half the batch, and left the other half as is. In two or three...

    Bottle priming error

Thanks for the ideas. I might try one botrtle with another tsp of sugar and see what happens. My worry is that it might just immediately froth up and lose a lot of beer wothout gaining much - but nothing ventured - nothing gained!!

    Bottle priming error

I just brewed a batch of Coopers Real Ale using 700 g LDM, half kilo of Dextrose, Fuggle hops and Safale SO4 yeast. Fermentation went fine at a steady 20 to 21 degrees C, and also the bottling. However its been in the bottle two days now, and ordinarily I would expect the bottles to be hard...

    Coppers diy lager no fizz

Most likley the first tip you got will prove to be correct! (Just wait a while longer) However there are two other common causes of that exact problem with kits like Cooper ones: 1 Failure to add priming sugar to the empty bottles before filling them. Correct amount is half Teaspoon per...

    Woodfordes Wherry Kit.

I have brewed one of these Wherry kits, and beyond any question the beer they produce is the closest any homebrew can ever come to a real ale as served in a good pub! I did not even use a hydrometer - just a close fitting lid which the escaping Co2 could push up enough. Once the gas stops...

    Cooper's enhancer 2 clumping problem

Thanks da Neuf. Sounds a bit like what I did apart from the swirling, although I had added the can contents first. Maybe that's where I erred! Fingers crossed - it will probably turn out OK in the end. Hope to see fermentation started in the morning and then just have to wait and see!

    Cooper's enhancer 2 clumping problem

I just brewed a can of Cooper's Real Ale and used the enhancer 2 kit plus Nottingham Ale yeast. I poured the Enhancer 2 (both bags) plus the contents of the can plus 500 grams organic molasses sugar in the bottom of the fermenter. Then I added two litres of boiling water. Almost immediately...

    Review: Cooper's Bitter Beer Kit

I have brewed several of these Coopers Bitter kits and it usually turns out great. I am now using 25 litres water (bottled water) which scales back the taste which I found a little too strong initially, and used about an extra 250 to 300 grams sugar to keep the alcohol level up to or slightly...

Organic Sugar versus standard granulated sugar

Thanks to all you guys for some really useful information and suggestions. Where I live in SE Asia, most of those ingredients would be all but impossible to obtain, so we pretty much work from the basic malt extract kits - when we can get even those!! These usually call for addition of sugar...

Organic Sugar versus standard granulated sugar

Thanks for that feedback, Ogri. A bit what I suspected would be the case. If a recipe calls for 1 KG normal granulated white sugar, would you replace with 1 KG of organic sugar or 1.25 KG - or 1.5 even - to get the same alcohol? I am thinking of trying 1 KG of organic cane sugar (the pale...

Organic Sugar versus standard granulated sugar

Does anyone have experience using the "Organic Sugars" that are on sale in most up-market supermarkets? There are several brands and types offered at about twice the price of regular sugar - but that's not really much when you are using it in 25 litres or so of beer. I have bought some Organic...
