    So you're not recirculating through a secondary heat source, but I think what folks are alluding to (above) is that, so long as you're recirculating, it's ok to use direct fire to keep the mash temp up. Or maybe that's not the question (?).

    Do any of you use an immersion chiller in an insulated kettle?

    I think that the chilling effect comes almost entirely from the temperature exchange between the liquid in the coils and the liquid in the kettle...the effect of any ambient temperature exchange (between the kettle and the outside air) would probably be negligible in comparison.

    I'm equivocating on that same point as well. It's not commercial grade, but it is quite a bit nicer than your average dorm fridge, so it might be worth a few extra dollars.
