    Your beer is at 4.26% That's a good Pumpkin Ale. I just bottled a pumpkin last night it came in at 6.3% That's about as high as I like to go for a pumpkin ale

    Just started up a natural yeast cider from the apple skins and its going crazy. Also trying a wine with welchs grape juice, started bubbling 10hr later. Check out my YouTube channel hymiesbrew.

    Should be fine let it set for two weeks then crack one open.

    Not worth it. Put a little water in to rinse it out into the wort.

    Through in some yeast nutrient or energizer you shouldn't have to pitch more yeast.

    You should be good in the 10gal pot with the additive to cut down foam. You a thermometer so you know when it's going to boil. 212f

    adding molasses

    Add it in on flame out. Be carefully on the amout. Really strong taste so it's easy to over do it.

    Bottling Question

    Use either of the two. It won't effect the mead unless you leave it out in direct sunlight for a day. Then you might get some off flavors. Beers you want the barker bottles because of the hops.

    Adding Vanilla to a JOAM

    Nothing wrong with adding the vanilla but your going to have a super honey sweet mead. 3.5 lb of honey per gallon is so sweet. I know this because I have made the Joam your speaking of.

    Fermenting in a Mini-Keg?

    That sounds like a cool alternative. That would brew straight up old fashion hard cider. I see no reason why it wouldn't work.
