    We ended up with about a fifth of an inch of ice, topped by a couple inches of snow. Pretty much all the schools in Omaha are cancelled, not sure about the Univeristy. I kind of hope so. I don't like my Step Daughter having to drive to her final with the streets as messed up as they are...

    Nurmey and myself will be feasting with friends and enjoying our Stella Artois clone and and Irish Stout. Having sampled them previously I can only say it's going to be a very Happy Thanksgiving. Happy Holiday everyone.

    If you cannot find the items locally that's probably not too bad of a deal. Funny thing about the progression of bottling to kegging. We started out bottling of course and then moved to keg's and Pig's, now we seem to be moving back more towards bottles if only for the sharing factor.

    bourbon lager recipe, any suggestions?

    We've done a couple of bourbon ales, and we've used way more that 1 oz of wood chips. We did one in Beam's Choice (it's an inside joke) and the other in Woodford Reserve. The Woodford was incredible, the Beam's Choice was well, let's just say it was unmistakeibly BEAM'S CHOICE, aroma and all.

    For what it's worth I too recommend waiting for the beer to finnish out fermenting. 5 days just isn't enough time. When first starting out I think we racked too soon (Hadn't learned brewing patience yet) and now that I know how much improved the beer can be by waiting, I highly recommend you...

    You actually think we have a standard? :D We try to hold to the 3-4 weeks but sometimes it's longer, very seldom is it less.

    Is it ok to leave beer in the fermenter extra long before bottling?

    While not an expert I will say that I've personally had beers that were extendedly fermenting, both in glass carboy's and Plastic Buckets and both turned out equally well. I do agree however 3-6 weeks is about right, then either rack to a secondary or directly to kegs.
