    I think it's 1388 if I remember the number right, a Belgian strong. Sounds likely it's not going to be a problem then. Guess I'll go ahead with the starter anyway & see how that goes.

    What was the IPA you tried that you liked so much in the first place? Oh yeah, maybe you should try some of the more traditional English IPA hops like Fuggles & Kent Goldings. They're not so citrusy, more floral & Northern Brewer maybe fo bittering.

    I'm going to do a Kolsch beefed up a little with some wheat dme. Maybe something like that would fill the bill for ya. Pretty easy to find a Kolsch recipe or kit. I just ordered a kit from Windriver from their internet newsletter special for $21 with wyeast.

    Have you experienced this? Just wondering. I tried brewing with all DME for a while but the FG always seemed high. When I asked about it at the brew shop I was told that while DME gave a higher yield it also contained a higher proportion of unfermentables.
