    Well, they are quite different and I think you will notice. If it were me, I'd get the Pilsner and use the 2-row for some other recipe later, especially because this is a Trippel recipe.

    I did a combo of Nugget and Centennial and it was super orangey - not orange-like, but almost like fresh-squeezed orange juice. Each addition was a 50/50 mix of each hop.

    But, holy crap, if there’s an exclusion for liquor liability (as there often is) there’s no coverage. Also, if he gets fined by the Dept. of Revenue or charged with operating an illegal tavern, I don’t know of any insurer that covers that. To the OP, call a lawyer - preferably one who knows...

    How to determine mash/sparge volume?

    A sight glass on the kettle makes things really simple. But before I had that, I just had to take pencil and paper and calculate how much water I'd lose to grain absorption in the mash (.15 gal per pound of grain) and then work backwards from the expected final volume to figure out the sparge.
