    Based on personal experiences with fruit, I would increase your mango addition by 1lb. Previous brews I have done, had only a hint of flavor with 4lbs...(Cherry & Blueberry brews). Freeze & Thaw, light pulses in a blender before adding to the secondary. Good luck & Cheers!

    I have a Whirlpool Wine refrigerator. I t has a temperature control built in & I can get it down to 36 degrees F. The racks are removable. Im lagering a maibock right now.

    A few years back I made a tripel that came in at 9%. Just recently, I made a Blue Berry Wheat that came in at 7.5%. These higher abv beers need a lot of time to mature & smooth out.

    Correct....the honey will ferment out, not much honey flavor added. Get some honey malt & steep that, prior to the boil. This will add more sweetness / honey flavor. Cheers

    Beer, cider or wine?

    You should try a "Cherry Wheat". Find a simple recipe (AG) or extract kit for an American wheat beer. Ad your cherries, frozen then thawed...5 to 6 lbs to the secondary. This should make an incredible beer. Cant wait to hear what you choose. Cheers & good luck!

    How much honey to add

    Welcome to the forum! So, the thing is that, honey is 100% fermentable. You will just be increasing your ABV...you may get a little flavor. The way to add some honey flavor is to steep some honey malt grains. Good luck!
