American IPA The New West Coast IPA

I finally got around to brewing one of these. Been about 5 years since I’ve brewed a clear ipa. Recipe: 1.066 to 1.009, 7.5 abv, 5 gallons 56 ibu water: 107 ca, 25 na, 53 cl, 140 so4 93 percent rahr 2 row 7 percent carafoam 0.25 oz Nelson for 60 mins 1 oz each Nelson and mosaic at 10 2 oz...

New England IPA "Northeast" style IPA

If I had strata on hand, I probably would have done that exact combo but I went with just Nelson and mosaic and it’s pretty fire. I actually think I like both hops a little more in west coast.

New England IPA "Northeast" style IPA

I’ve used it twice. Both times blended 50/50 with s04. Both times it dropped clear after a few weeks. I maintain perfect haze with s04 and my suspicion is that it’s because s33 is a lousy flocculator. So I think that even with a soft crash, it stays in suspension and then drops out later...

New England IPA "Northeast" style IPA

I had some crappy Nelson previously. I think it was 23. But I just brewed a west coast with 23 Nelson that I bought on closeout from YVH and this bag is killer.

This is great! Thanks for taking the time to do it! I also found the fg data surprising. I like mine around 1.014 for drinkability but assumed most were targeting a higher fg. This data to me shows how influential this thread has been on all of our brewing. If you look at the OP, compared...

American IPA The New West Coast IPA

I’d imagine this combo would be killer. I love Nelson in a west coast style and I find Motueka presents well in literally anything I’ve tried it in. I’ve used it in saison, NZ Pilsner, cream ale, pales, west coast, hazy…. It’s works great at low hop levels and high levels. And it can be a...

New England IPA "Northeast" style IPA

Sorry to hear about these struggles! What do your other beers taste like? Is this only a hoppy beer issue? Based on everything that’s been discussed I really don’t think this is process driven except maybe sparge ph and it sounds like you’re looking into this already. The other culprit...

“More resinous” is what I’d love in this beer so I’ll definitely give it a go. I’ve read alpha cannot really be determined. I assume you’d use a low temp whirlpool like 160 when using this? Thanks for the intel!

I haven’t seen much about hop hash. I just put in a decent sized order at yvh and they threw in 4 oz of mosaic hop hash. Was considering using it along with 4 oz t90 mosaic on a west coast mosaic ipa I have coming up. Does anyone have experience with it?

Totally agree with you! Bagging sucks but not as much as a clogged outpost. I have an older big mouth bubbler (before they changed the lids). I actually saw your setup before and was leaning towards that option. But then I saw this post and wondered if you switched. I’m gonna try tilting...

I have a spigot on my fermenter as well. I started bagging dry hops because they were not settling out low enough and a lot were transferring to the keg. Do you dry hop in a separate vessel? Id love to find a way to not bag them but am leaning towards just purchasing another setup.

I saw that in your insta page. That’s amazing, congrats on the hardware! I actually brewed a 5.2 abv beer using the tips from your recipe that came out really nice. I used Nottingham on mine because I’m also trying to get more neutral yeast character in these beers lately. It works well but...

New England IPA "Northeast" style IPA

Nice! I honestly have never used BRU-1 but suggested the Idaho 7 in the dry hop because it’s high oil will help the haze given that mosaic is not a great haze producer.

New England IPA "Northeast" style IPA

I brew Hazies without citra fairly often (so does Hill farmstead btw). If you want to use those NZ hops: I’ve done Waimea, Nelson, Motueka and it was awesome. From the list: I think Idaho 7 hot side with a dry hop of Mosaic, el dorado, and a bit more Idaho 7 ( i like this hop in whirlpool and...

I think it was your Nelson. I had a bag of 2023 Nelson from YVH do the same thing to me that I ended up throwing out. I’ve seen this from Nelson a couple times. Bright with Nelson from tree house is one of my favorite beers but I recall a batch that had this flavor a couple years back that...

New England IPA "Northeast" style IPA

This is true for me as well. I have not had treehouse in a little while (moved to Florida) but I remember that I always got rotted fruit from alter ego and doppelganger. I brewed an all mosaic hazy pale recently that friends loved, but I got the rotted fruit. Always loved Bright (og mosaic)...

It’s STA1 positive so id guess sacch Trois as well is part of the mix.

New England IPA "Northeast" style IPA

I’ve co-pitched quite a few batches. Mainly with dry yeast because it’s easy. I’ve tried (50/50 ratio always): Notty/windsor : works well but not a favorite S04/us05 : very happy with this Verdant/new England: liked this a lot S04/s33: beer was initially awesome then dropped pretty clear and...

American IPA The New West Coast IPA

Thanks for the input everyone. Seems like most are using Chico. I had 34/70 in my head for two reasons: highland Parks’s success but also a brewery near me (Sideward) was on the CBB podcast and said they use it on their flagship ipa. And that beer has an awesome hop expression. I had been...

I was considering 34/70 but I’m looking for a consensus on if Chico is preferred.
